Soft Pretzels

Living in New York, you are bombarded with street carts selling soft pretzels.  I admit I have only had one since living in New York for eight years and it wasn't very good. I experienced my first and only pretzel while wondering Central Park when my sister was in town, we were so hungry that we bought one as something to hold us until dinner.  It tasted stale and was cold.  Nonetheless, I still love soft pretzels. I decided to make this recipe a little while back and was completely blown away by the results.  My boyfriend even said, 'wow, they taste like a real pretzel!' and since he is from New York I was definitely flattered.
A Few Things: I served the pretzels with two different kinds of mustard - a spicy and milder version, in addition to Greek olive oil. These would also be utterly amazing dipped in melted dark chocolate.
