If there is one type of food that I crave, it is falafel. When the craving kicks it is hard to beat it. Luckily, here in New York, we are surrounded by amazing Middle Eastern/Mediterranean restaurants, however, sometimes it is just nice to kick back and make your favorite foods in the comfort of your own home Mediterranean food is the only type of cuisine that I can think about lately, since we leave for Greece on Friday!
I followed this recipe and absolutely fell in love. The large amount of fresh herbs like cilantro and parsley add a freshness to these fritters, while the coriander and cumin added an earthy flavor. The exterior of the falafel was crispy, while the interior was light and fluffy.
A Few Things: You could serve the falafel on a platter or in a pita, which is the route that I chose. I created a sandwich by using my favorite recipe for cucumber salad and a healthy dose of homemade hummus (I followed this recipe). This was a light and refreshing weekend dinner. Next time I make this, I think I will be adventurous and make my own pita.
