Kale Chips

I am always looking for ways to incorporate more greens into my diet - spinach, arugula, Swiss chard and kale.  I was recently at Whole Foods and they were sampling homemade kale chips, they were amazing. Who would have thought that a green that is a little too bitter for my liking can be transformed into a crunchy and delicious, not to mention very healthy snack. Their version was dressed with a bit of extra virgin olive oil and garlic salt.  I tried to duplicate that recipe and the results were just as good. This proved to be an excellent snack and tasted much better than something that comes out of a bag.

Ingredients:
5 ounces kale with stalks removed
1 tablespoons extra virgin olive oil
Garlic Powder (to taste)
Salt & Pepper (to taste)

Directions: Preheat oven to 350 degrees. Remove stalks from kale and chop into fairly large pieces and place in bowl.  Add olive oil, garlic powder, salt and pepper and toss with hands to combine. Place on baking sheet and bake for 15 to 20 minutes depending on how crispy you would like your chips.  Allow to cool and enjoy!

  6. Kale chips are one of my FAVORITE healthy snacks. They're so much better than you expect them to be and the "crunch" is perfect for a salty craving.

  10. Oh my gosh! I know! The first time I tried these I was so fricken amazed that it was kale.

Great photos too! You've got a knack for food photography. Love how you've really highlighted the slight browning of the chip, and you've made simple leaves look absolutely mouth-watering. Adore this post, and now I think I'll make kale tonight!
